we had a hankering for meatloaf, and I thought I could whip together a recipe using all the vegan cooking skills I have learned, they were awesome, recipe coming soon.


“bacon” on pizza


we happened to have some vegan cheese, so we decided to whip together some mini pizzas for our cravings, i really had a hankering for things that A did not want on his pizza, so we decided to make mini ones and put whatever we wanted on them. using storebought pitas, and sauce, we decided to waste some time and whip up some kind of bacon substitute to have with our pineapple, so i mixed some tofu with liquid smoke, nooch, and maybe tamari, i dunno until it tasted smokey and salty like bacon, and we popped them in the oven for a couple mins, mmm.

Apple sammies!


Easy to make, a bit time consuming, makes a nice snack to take on a picnic. just smear some pb add some coconut and raisins and smack em together. delcious, oh and we also put lemon juice on the apples to stop them from browning, make sure the apples are dry or the peanut butter doesnt stick very well.

Pesto Pasta Pesto Pasta Pesto Pasta three times fast!


I think I just like saying Pesto Pasta really fast, this dish was easy to prepare, cranked up the oven to char my veggies quickly--just a little bit of burnt bits still maintaining a crispy texture, threw a handful of spinach, rocket, and basil into a processor with pine nuts, garlic, olive oil, added some nooch and cayenne and a dash of vegan parmesan cheese. mmm. mmm.

Chocolate fudge..err…uh chocolate something


The other night we were watching Junior Masterchef, if you aren’t familiar with the Masterchef idea, they have a bunch of people competing to be the best chef, in the case of Junior–its kids, adorably cute kids that can cook better than most adults I know.  The theme was chocolate and we were just drooling over the mass amounts of chocolate that were being used and consumed, it made us really want some.  I had the idea for fudge, especially vegan fudge can be pretty easy to make and something we could enjoy rather quickly.  So we found us a good ole recipe and started measuring out our vegan margarine.  I was about to put it in our double boiler when I realized we had no icing sugar/confectioners sugar, i don’t know if a suitable alternative fudge component exists and I didn’t want to ruin our expensive and hard to find vegan chocolate chips, so we decided last minute to make something yummy and chocolatey and non fudgey.  I melted the chocolate chips, and put in chunk of coconut oil, added some cashews, and some coconut and stirred it all around to make these yummy chocolate clusters, then we shoved em in the freezer to set faster.  This was the end result- crunchy, chocolatey, and delicious.
